The fire

Ash and oak,lit at tenevery morning.

At the end of the counter is a wood-fired grill and a brick oven, built into the base of the old malting kiln. Isobel lights it before the bakers have finished, and by service it’s a bed of embers that does most of the cooking — beetroot buried in the ash, whole fish over the flames, the Sunday beef resting at its edge.

The wood is coppiced ash and oak from a charcoal co-operative twenty-two miles away. What’s left in the morning goes to the market garden that grows our vegetables.

Private dining

The Kiln Room, for up to fourteen.

One long oak table under the brick cone of the old kiln, with its own door and its own server. Or take the counter, or the whole restaurant.
